One-hundred-seventy-two volatile compounds were identified in the cultivars, representing 30.26 mg/kg, 22.36 mg/kg and 68.26 mg/kg for Cesari amarillo, Cesari morado and Pajarito cultivars, respectively. Isohexyl isohexanoate, isohexyl isovalerate and isohexyl 2-methylbutyrate were the major compounds in Cesari amarillo and Cesari morado; while in the Pajarito cultivar the majors were isohexyl isovalerate and hexyl isovalerate. Cesari amarillo and Cesari morado have many similarities among them in comparison with the Pajarito cultivar, not only in the total amount of volatiles, but also in the individual distribution of major compounds.
